Cherry Season is Coming!

If you are lucky enough to have access to sour cherries then you are among the select few. Sour cherries make the best pies and jams. If you disagree, well, that's too bad.


Cherry Preserves

2# Cherries (pitted)

¼ c Granulated Sugar

½ tsp Citric Acid (omit if using sour cherries)

2 Cinnamon Sticks

1tsp Almond Extract

¼ tsp Kosher Salt

Combine all ingredients in a sauce pot and bring to a boil.

Continue to simmer until thickened and jam-like consistency.

Cool and store in an airtight container, label, date, and refrigerate.


  • Tip: to make this recipe into pie filling, thicken the preserves with a slurry!
